I have been using this set non-stop for over a month. I love it - it is the best non-stick surface I've ever used. I haven't had any problem with carbon build-up, but then again, I don't use non-stick cooking sprays - I use an oil spritzer. The difference between the two is that non-stick sprays contain soy lecithin which is totally fine and won't harm you in the least, but it builds up on your cookware over time. As long as you avoid these, any non-stick cookware should last you for years, assuming you use wooden or silicone utensils. I love that they are oven safe because the handles are silicone instead of rubber.

How do you classify this product as being "green"? To me a green product reduces the carbon footprint in both using and manufacturing a product. Consider how green this is: the manufacturer creates considerable carbon waste by having pans made in China, then shipped to another location (unknown) to be anodized, another location to be coated and then shipped to their warehouse, then shipped to distributors then shipped to retailers then likely shipped to the customer. Talk about waste!



When considering green products, find out how much carbon was burned in manufacturing a product before you buy. BTW I cannot find any information about Earth Pan III products other than the typical Farberware process noted above.

 "Carbon Build-up A Major Problem" 2009-06-09

Purchased this in December and I can tell you over time that it definitely becomes nonstick because of the carbon buildup. I found no way to remove it. Also, turn the pan up too high and it becomes garbage with black rings running around the inner surface of the pan. It only takes once. Even though I usually discourage metal utensils in all my nonstick, someone did use a metal spatula and now has a deep scratch in the center. On the plus side it has never peeled. I no longer use it. I'm on to the next set of non-toxic non-stick cookware...Ceramcor's Extrema which can tolerate metal utensils and so far has remained non-stick and can also be cleaned with stainless steel scrubbers and comes with a 50 year warranty so long as you don't drop it. It's fairly new and I don't believe that Amazon carries this yet. It reminds me of the corning glass cookware only solid black in color and non-stick.

I purchased this cookware about a month ago and am very pleased with it. The terra cotta color is beautiful in my kitchen and most important the nonstick surface works. I liked the idea that it does not contain harmful chemicals. I have never had nonstick pans last forever, so don't expect these too, but if they do peel, they shouldn't be a health hazard. So far, no peeling and great nonstick cooking.
